{Menu Monday} Crock pot challenge!

I loooooove my crock pot. It makes cooking SO much easier, especially in the fall and winter when we want warm, comforting food. If you don't use your crock pot much, I encourage you to give it a try! With a little adjustment, you can even convert favorite recipes into crock-pot-friendly meals (like Friday's fajitas).

So this week, I decided to see if I can use my crock pot every day. Plus, Amber is moving this week, so maybe this will help her out too. :-) I'm hoping I will have some new fall/winter staples for my recipe file!
Monday - Marinated Ranch Broiled Chicken, Potato Casserole, Caesar Salad (I'm going to try converting the chicken to a crock-pot version)
Tuesday - Chicken Tortilla Soup, Cornbread (Zack's favorite soup ever)
Wednesday - Smoky Grilled Pork Chops, Twice Baked Cauliflower, Butter Rolls
Thursday - Cubed Steaks with Gravy, Roasted Broccoli with Soy Sauce and Sesame Seeds
Friday - Chicken Fajitas in the Crockpot, Chips, Salsa
Saturday - Slow Cooker French Dip Sandwiches, Cheesy Zucchini Bake

I'm excited about this week's meals! Better stock up on some liners... :D

    1 - I am answering the crock pot challenge as well -
    M = white chicken chili
    T = potluck spaghetti
    W = red beans & rice with kielbasa
    Th = flank steak in the crock pot
    F = adapt shepherds pie to crock pot

    2 - I LOVE crockpot liners!!! They make things soooo easy!!

    3 - I have the red version of the pictured crock pot above :-) And I'm pretty sure the manufacturer's directions warn against filling it that full -- funny!

  2. Haha yes, I've had bad luck with a too-full crock pot too ;-)

    Your menu sounds YUM! I'm interested to hear how your Shepherd's Pie in the crock pot goes.
