{Menu Monday} September 12

I'm ready for another week of some yummy meals! It is amazing how much work and time it takes to find good meals, but it's SO worth the effort. My husband appreciates it so much, and it keeps my oh-my-goodness-it's-4:30-what-do-I-do moments to a minimum.

Zack (my husband) ended up being out of town for a couple of days, so two of these meals are from last week. I don't know about y'all, but I am ready for FALL! I love the easy soups and stews that come with fall, and I'm thinking a lot of them will be naturally low-carb.

We have another change on our horizon. Zack, aka Superdad, rearranged his work schedule to be home on Wednesdays with the kids so I can teach piano lessons. That's going to give us more flexibility in our budget (ideally), and some of the proceeds will be dedicated to Project Defrump Mama. Wahoo! Y'all should seriously see the state of my closet. Pathetic. ANYWAY, to the point, that means that I'm going to try to plan slow-cooker meals for Wednesdays, since Zack admittedly has a fairly poor track record for creating edible meals, heh. But that's all right. He can do just about everything else. :-)

Before I share this week's menu, I wanted to update you on a few recipes I tried last week. I loved the Cheesy Zucchini Bake. Zucchini has become a big friend of mine in this new way of eating. And whether you think you like fish or not, you must try the Broiled Tilapia Parmesan. Seriously one of my favorite meals!

Monday - Chicken Alfredo Bake*, Quick Creamed Spinach*
Tuesday - Southwestern Skillet Chicken*, Baked Brown Rice
Wednesday - Chicken Enchilada Slow Cooker Soup*, Corn, Green salad
Thursday - Marinated Ranch Broiled Chicken*, Baked Brown Rice, Steamed Broccoli
Friday - Bacon & Scrambled Egg Bagel Sandwiches
Saturday - Paprika Pork Chops*, Zesty Coleslaw*, Butter Rolls
(Sundays are always lunch at my mother-in-law's)

*This is an untried recipe. I cannot vouch for it yet. As you can see, I am trying lots of new recipes these days. My old ones are all FULL of carbs (thus the predicament I'm in).
