{Menu Monday} September 5

I'm so excited to start sharing my menus with you all! I'm a big-time planner (unfortunately, I'm not such a big-time follow-through-er! =\ ), and menus are no exception. I believe one of the best things we can do for our families, our marriages, and ourselves is to have healthy, yummy food on the table every (...? or almost!) evening so we can have that bonding time together. Plus, it's soooooo much more healthy and frugal than take-out and eating out. My family eats dinner at the table together pretty much every night, and it's one of my favorite times. I also love to try new recipes, so my planning and menus incorporate a lot of those. I would say feeding people is probably my love language. ;-)

I am (loosely) following the South Beach Diet plan. I say "loosely" because I do cheat now and then, and I also don't strictly do low-fat meats and sauces. I am coming to realize two main things about food:
  1. Every. single. meal. of my life does not have to be a treat. (this was a big, hard lesson for me!)
  2. White stuff is bad for me. And makes me gain weight. And makes me feel really groggy and tired. SO, that means these menus won't have too much white stuff (flour, rice, potatoes [sob!], sugar). That will be mostly reserved for holidays and birthdays.
But that doesn't mean it's not going to be GOOD! And here's what we're having this week:

Sunday lunch - BBQ Sandwiches, Cheesy Zucchini Bake
Monday - Chicken Fajitas, Black Beans, Chips, Salsa
Tuesday - Beans, Cornbread
Wednesday - Crockpot Flank Steak, Homemade Tortillas, Black Beans, Chips, Salsa
Thursday - Broiled Tilapia Parmesan, French Bread, Caesar Salad
Friday - Chicken Alfredo Bake, Quick Creamed Spinach
Saturday - Southwestern Skillet Chicken, Baked Brown Rice

  1. I tried the Broiled Tilapia Parmesan last week, and it was SOOO good! One of our favorites now. Looking forward to trying some more of your menu!
