{Menu Monday} Oldies but Goodies

This is another week of pantry cooking! We are trying to get through this whole pay period without buying food. And my go-to when I'm trying to do cheap -- BEANS! I know, I know, they're the musical fruit. But I have found that if you are sure to dump the water you soak them in, that helps tremendously. I've also heard that cooking them with a little cinnamon can help...? I can't personally confirm or deny that claim. So three of our meals this week include beans. They are high in fiber and protein, and just a great all-around, CHEAP option. And good, y'all.

Oh, and I don't know if anyone else tried it, but we weren't too impressed with the Pumpkin Pie Smoothies. They were just ok. Probably won't make them again. Sure sounded good, though!

Here's the food for this week!
Monday - Crock Pot Chicken & Black Beans, Corn, Rice (I'll probably make a double batch because I LOVE this for lunches, either on a low-carb tortilla, or on a bunch of lettuce as a salad)
Tuesday - Grilled Chicken Greek Salad, Pita Bread, Strawberries
Wednesday - Pizza with Squash Crust, Caesar Salad, Bread Sticks
Thursday - Beans, Cornbread
Friday - Burrito Pie, Chips, Salsa
Saturday - Baked Omelet Squares, Whole Wheat Toast
