{Menu Monday} Pantry week! (also, I love football!)

My husband has played football since he was like 5 or something. He could have easily played on scholarship in college if he had chosen to go to a slightly smaller school, but he loved the Arkansas Razorbacks so much he chose to walk on with them. He was extremely dedicated and loved it. So it's funny to me that now, as adults, he likes watching/following the Razorbacks maybe half as much as I do! I am a hardcore Razorback fan. SEC football is one of my favorite things about the fall. (Sorry to all you other conferences; you just aren't the same ;-) I love the competition, the football parties, everything! And I know enough about it to easily follow the games, so that helps. I especially love the way it gives our town (where the university is) something to unite over. Game days are so festive and the air just buzzes with excitement. We had a game Saturday against Texas A&M that was looking pretty scary for awhile, but the Hogs pulled it out!

But enough about football. It has nothing to do with anything other than I love it. On to the food ;-)

Ok, update on last week. The ranch chicken was still good, but it's not a crock pot recipe. It didn't have the same crusty yumminess that it gets when baked or broiled. And it was honestly no easier, so there's not much point. Worth a shot though! The tortilla soup, however, is seriously SO good. That will be a fall staple for us!

This week I am trying to spend as little as possible on groceries, so I'm cleaning out the pantry and freezer. I have a LOT of frozen chicken breasts, so they make several appearances. I think I can make this work!

Monday - Red Beans & Rice
Tuesday - Garlic Cheddar Chicken, Baked Parmesan Tomatoes
Wednesday - Cubed Steaks with GravyRoasted Broccoli with Soy Sauce and Sesame Seeds
Thursday - Whole Grain Waffles, Eggs, Applesauce
Friday - Chicken and Asparagus with Three Cheeses, Bread
Saturday (breakfast)- Apple Pie Oatmeal, Pumpkin Pie Smoothie

The Razorbacks (#10 in the country, wahoo!) play Saturday evening as well, so I'll probably end up making some sort of party food. Woo Pig Sooie!
