{Menu Monday} Tryin' a new thang...

Well, this week's menu is getting here pretty late! I hope that these menus are useful to you, and you can at least use them as a springboard for your own recipes and ideas. I often look at other people's menus for inspiration, but use or find my own recipes.

I love my mother dearly, but she and I disagree one something that impacts our lives more than you might think.

Bell peppers. 

She loves them; I despise them. I truly can't even pick them out -- they ruin everything!! Especially meatloaf. And so, I've always thought that I didn't like meatloaf and have therefore never made it. I have come to realize though, that there is nothing else in meatloaf that I don't like, so I am going to give it a try.

I created my own recipe, and it is totally untried, so we shall see if it's a complete flop or not! I read on another blog that you can substitute flax for the bread crumbs to make it more South-Beach-friendly, so I will be trying that. Feel free to use bread crumbs instead though.
Monday - Chicken and Black Bean Quesadillas (made with leftover Crock Pot Chicken and Black Beans), Chips, Salsa, Guacamole
Tuesday - Shrimp Scampi, Cheddar Garlic Biscuits, Caesar Salad (ok, so this isn't very low-carb, but I just won't eat much pasta!)
Wednesday - Marinated Ranch Broiled Chicken,Twice Baked Cauliflower, Butter Rolls
Thursday - French Dip Sandwiches, Broccoli and Carrots with Ranch, Chips
Friday - Meatloaf, Cheesy Zucchini Bake, Rolls
Saturday - Cookout at my mother-in-law's

  1. I can't believe you're finally giving meatloaf another try! Yay!! I never put bell peppers in mine. Your menu looks yummy, btw!

  3. I have a super delicious meatloaf recipe, actually. But yeah, it has bell peppers. I use Stove-Top stuffing instead of bread crumbs. Aaron loves it! Great way to incorporate lots of veggies, too. Bell peppers, onions, shredded carrots — I toss it all in!
