{Menu Monday} Budget recovery

Did y'all have a superb Christmas?? We surely did. We are so very blessed, and I got to spend the day with my very favorite people -- family! :-) I am so grateful that I have two wonderful families -- one by birth, and one by marriage.

Ok, I think I'm onto something. Point 1: We go out to eat maybe once a month. Maybe every six weeks? Anyway, it's not too often. And we never go just because I haven't cooked dinner, ha! But I love to go out to eat... Point 2: My 30th (!!!!) birthday is in a month, and I've been thinking about what's on my wish list. I have a hard time with wish lists because I'm really more of an experience girl than a gifts girl. Oh, I like gifts, don't get me wrong, but most of the stuff I would really want would be in the $200+ range. heh heh... (like, a Kindle Fire or an iPad, a robotic vacuum cleaner [not kidding], a Silhouette, etc.)  Not exactly in the budget.

So, I requested this year that instead of gifts, we take the money budgeted for my birthday and go out to eat a few times this month, whenever/wherever I want to go. Doesn't that sound fun??? So I can totally say, "I don't feel like cooking tonight. Let's just get a pizza." Ok, maybe I'm too simple-minded, but that excites me. ;-) Especially since cooking has been really not appealing to me lately. (have I mentioned that already...?)

And, of course, I used my first night. Tonight. After all the cooking from Christmas, and all the Christmas recovery cleaning today, I did not want to cook. So we went out. And now I'm full and my kitchen is still clean. Win win.

As for the rest of the week, here is my plan. I'd wager that our budget isn't the only one that's gone for the month! So we are doing simple, frugal meals with stuff I already have in my pantry. And Friday we have family plans, so I don't have to worry about that night either! So really I only have to worry about three nights this week. That feels like cheating....

Monday - Out!
Tuesday - Biscuits and Sausage Gravy, Fruit
Wednesday - Chicken Taco Soup, Cornbread
Thursday - Nachos, Chips, Salsa

Who else is getting back on the diet bandwagon in January?? I know I am! (even if I'm pregnant!) I'll be looking for some new, yummy, low-carb recipes. Stay tuned. :-)

  1. I am pregnant as well and finally able to get back to healthy eating (my first few months were pure mashed potatoes, toast, and macaroni and cheese-thanks to morning, noon, and night sickness ;)) . Here is what we are eating on this week:

  2. I think that's a great gift! When you're the one planning for, and cooking, 3 meals a day everyday eating out is definitely a nice treat! This way you'll be able to do it guilt-free, I think that's a great gift!

    Oh yeah... I'm definitely going to be more contentious about what I'm eating in the coming weeks. The last 2-3 weeks have been filled with far too much sugar and carbs!
