{Menu Monday} Easy Peasy

In our area of the country, the weather has been SO nice this month! We've had a couple of cooold days, but for the most part, each day has hit 50 at least -- some days even getting to 60! This whole week promises to be beautiful, and I plan to have my kids spend lots of time on their new Christmas present -- the trampoline. :-)

So, what are you cooking this week? I am looooooooving my 5-week menu plan. So far, every evening I've asked my husband, "Would you be happy having this again in  5 weeks?" And so far, his answer has been "yes!" every time. This has seriously made my life much easier. (in comination with the menu-planning wonder that is Say Mmm!!!!!)

Here's what we're eating this week:

Monday - Mac-n-cheese Casserole, Salad (I know this doesn't sound like much of a dinner, but I need to use up some of this stuff in my pantry! Plus, it sounds good to a first-trimester preggo :D )
Tuesday - Mexican Pizza
Wednesday - Whole Grain Waffles, Eggs, Applesauce
Thursday - BBQ Pork, Chips, Salad (My husband has rated this the best BBQ pork he's ever had! And it's SO easy.)
Friday - Pizza, Caesar Salad
Saturday - Baked Salmon, Wild Rice, Roasted Garlic Parmesan Brussels Sprouts

  1. MAN! I can't believe how much easier dinner is these days! There's so little thought involved each day and much less per week than before. I just check to see what I already have and need to use up, how it fits into my 5 week plan and what else I need from the store. I haven't been strict about doing each day's prescribed meal, but try to use one of the ideas from the calendar or an equivalent. I laminated my chart and I just cross things off and date each meal so that I know how to rearrange things next month. Much lower tech than SayMmm, which I still plan to do, btw, but it works for now. Done is better than perfect!
