Dill Cucumber Rollups {Low-Carb Party Recipe}


I find that one of the hardest times to be on a diet is at a party. The goal is to have fun, so often the food is very unfriendly to the weight watchers. This delicious recipe is very low-carb thanks to my new favorite diet saver – Joseph's Flax pitas/flat bread. At my Walmart Supercenter they can be found under the deli counter. Half a large flatbread or one tortilla-sized pita is only 4 carbs! And yet they are still so good. 

To make this yummy finger food, start with cream cheese and add dill, salt, and mayonnaise. Spread this in a thin layer on one rectangular flatbread. 

Then take a cucumber and julienne it. It would also work to slice it super thin (thin enough to roll). 


Distribute the cucumber on the flatbread and roll rather tightly (without squirting the filling out). 


Slice the rollup in 1-inch pinwheels and you are done!


This flatbread is SO good, you seriously won't feel like you are on a low-carb diet at all!





Dill Cucumber Rollups

Ingredients:
1 large or 2 medium cucumbers
1 8-ounce package of low-fat cream cheese, softened 
2 tablespoons mayonnaise
1/2 teaspoon dill
1/4 teaspoon kosher salt
3 Joseph's Flax flatbreads

Directions:
Mix cream cheese, mayonnaise, dill, and salt until smooth. Spread evenly on the three flatbreads. Top with julienned cucumber and roll tightly. Slice into 1 inch pinwheels.
