{Menu Monday} Low Carb Dinners

I'm kind of strange in that I actually enjoy making menus! (Ok, so that's not the only thing that makes me weird.) I like having control over what we are eating, and when I'm on a diet especially, it's good to get excited about the good food I get to eat! That helps keep me from feeling like I'm deprived. I've been doing a lot of research lately on low-carb dinners and I'm excited to share my 4-week rotating menu with you soon.

Here's the delish (thank you forever for that, Rachael Ray) stuff we're eating this week:

Monday - Baked Chicken Parmesan, Spaghetti Squash, Caesar Salad, French Bread
Tuesday - Black Bean & Cheese Quesadillas (I will use Joseph's flax lavash bread for mine), Salsa, Guacamole
Wednesday - Gourmet Grilled Cheese with Bacon, Avocado, and Tomato (more lavash bread for me), Chips, Salad
Thursday - Lake Powell Marinated Mahi Mahi, Rice Pilaf, Cucumber Tomato Salad
Friday - Roast, Creamy Cauliflower Purée, Steamed Carrots, Rolls

  1. I need to look for that bread you are using. We have Ezekial bread, but I have not used it. I need to get back to low carbng, it is the only way for me to lose weight and keep it off, plus I have fibromyalgia and just read an article about a carbo connection and increased pain.
